And it's dang good. Whipping this dinner up last brought back memories. I think that this was one of our family's favorite dinners (definitely Michelle's, not so much for Austin-Austin had a thing with corn). I, of course, starting making this meal when James & I first got married because it was a cheap dinner. I can make all sorts of versions of this Spam & Egg Casserole; today I sprinkled parmesan cheese & parsley on top.
