Zucchini-Part 6

I think James & I were in agreement last night; these zucchini were the simplest, freshest way we've had them yet. Last night's dinner came about because: A, I wanted rice. B, I wanted sausage. C, I wanted to try zucchini this way when I read this post. I guess you know your dinner's good when your husband & son go back for seconds.

Rice, Sausage & Peppers Skillet

*All veggies came out of somebody's garden :)

1 Anaheim Pepper-diced

1 Banana Pepper-diced

A couple of Green Onions-diced

Salt & Pepper

EVOO

1 Turkey Kielbasa Sausage-diced into bite size pieces

2 cups of rice

3-4 cups of hot water

In a large skillet, on medium high heat, coat the bottom with some Evoo. Throw in your vegetables & Rice. Basically you're going to toast the rice & saute the veggies. When the rice gets to a point of being toasted, not quite turning brown (make sure everything gets coated witht he EVOO), add your sausage & pour on your water(I think I used 3 cups) covering everything. When it comes up to a boil, reduce the heat to low, put the lid on & set the timer for 20 minutes. Do not fuss with it...Don't touch. When the 20 minutes are up, stir everything together & dish onto a plate, or a bowl in my childrens case.

Zucchini w/cheese

For my family I sliced 12 slices of zucchini-not to thin, not to thick. I placed them on a cooking sheet with some foil (to make clean up easier), sprinkled with EVOO & salt , pepper. I then sprinkled on some Italian cheese blend. Put underneath the broiler for 6 minutes or so, or until the cheese melts. I like my melted cheese a little more crispy; just a little golden. Eat & enjoy.
