Low & Slow over charcoal briquetts, with some hickory chips??
Well, James & I have been working on our smoking techniques. James got a smoker for his birthday, and we love pulling out and smoking meats up when we get the chance. Tonight for dinner, my Mom wanted to have James BBQ up some Tri-Tip & a rack of beef ribs. Our backyard smelled like hickory smoke all afternoon. It was such a good smelling smoke {if there can be one}.
Everything turned out so good, and the food disappeared....no leftovers.
This is the Tri-Tip; nothing too special went into preparing it; actually just used a packet of McCormick Mesquite marinade & let it marinate for 4-5 hours.
Can you see that smoke ring??? The meat was very delicious.
The ribs, well I didn't get a picture of those, but they were delicious as well. We used James' dry rub on those {a mixture that he throws together}.
James is already planning the next time he'll get to smoke again.
