Zucchini-Part 2

I think I've hit that critical point of the summer harvest where the question is asked, "What the heck am I going to do with all these veggies?"
Tonight's creation stems from an idea that I saw online. The recipe I found called for all the ingredients to be cooked in a muffin tin-little mini quiches. My plan was to go by the recipe (because I actually had all the ingredients), but once I started cooking, I thought to myself, "Why should I dirty another pan when this perfectly good cast iron pan can go in the oven?"
Well I think my Zucchini/Red Bell Pepper Quiche turned out quite well, I mean, I even got Jordan to eat a little bit of it (Jordan does not like eggs.....will throw up to get out of eating eggs).

Zucchini/Red Bell Pepper Quiche

1 regular zucchini-diced
1 Red Bell Pepper-diced
4 green onions-sliced (use both the white & green parts)
2 cloves of garlic-minced
Extra Virgin Olive Oil
Salt & Pepper
6 eggs-beat them up (I also added maybe a tablespoon of Half-Half because I had it in the fridge)
Italian Blend Cheese
Parsley

Preheat oven to 400 degrees. In your cast iron skillet (or regular skillet; you'll just have to transfer to oven safe dish later), saute the zucchini, pepper & onions in some EVOO (enough to coat the pan-a tablespoon or too). Throw on some salt & pepper to season those veggies up. Move the veggies around so they all get some flavor of the olive oil. Throw in the garlic and mix everything around. Let the veggies "cook" on medium heat so that they soften up. Once you're satisfied with the amount of softness, push the veggies into an even layer &pour on the eggs. Cover the top of the eggs with cheese & then sprinkle with some parsley. Move the dish into the oven & let it finish cooking for about 10-12 minutes depending on how you like your cheese (I like mine more golden). Because of the Olive Oil, you can slip that sucker right out of the pan onto a cutting board and slice it up.

Take a bite....repeat.

So, I gotta say something about my green onions. I found out tonight that I have green onions. Since May, I thought we were growing leeks, except the leeks haven't changed much since we put them in the ground. I asked James to go pick me some leeks because I thought it would go good with the zucchini. He brought in these four little things. I said, "Those are green onions." He said, "No, they're leeks, if I would have given them more room, they would be this big." I said, "Nope, those are green onions." He said, "Well the container said Leeks." Silly Valley Nursery.
