Zucchini-Part 3
Well...there was kinda a part 3 in my series of using zucchini this week, but honestly it wasn't anything spectacular-plus I forgot to take pictures. I decided to make zucchini cakes, and I noticed that as I was combining everything, the zucchini subsequently was letting go of it's juices, thus making a "smooshy" cake. I did however, store them in the freezer for a little bit and I think that help out. I also noticed, as I was combating the "smooshy", if I let it crisp up on one side, flip it, and then pat it down, and if I repeated that until it was all the cooked, the shape seemed to hold itself. In the end, it was an eatable patty but not too highly tempting because instead of another zucchini cake, I went for a slice of freshly made zucchini bread.
