Zucchini-Part 4

Ahh, another successful use of our ever abundant growing zucchini (I mean, how is it that we're getting more when we only have one plant???). Tonight, I surprised James with steak-for no special reason other than I saw it at the commissary and said, "Why not". To go with the steak I made a sort of zucchini/potato succotash. It turned out wonderful-very flavorful. I'm kinda liking having to figure out a different dish every night that has zucchini in it. I'm sure my family is getting tired of the dang squash :)

Zucchini/Potato Succotash

1 reg zucchini diced
2 potatoes peeled & diced
A couple of green onions sliced-white & green parts
2 cloves of garlic minced
salt & pepper
EVOO
Parlsey

First off, in a big skillet w/a lid, cook the potatoes in some water. We're pre-cooking the potatoes first (because they're harder to cook) to a point that they're soft, but not to soft (we don't want them falling apart in the skillet when we add the other veggies). After the potatoes are partially cooked and drained, and all the veggies into the skillet. Drizzle on some EVOO, coating all the veggies with it's yummy goodness. Sprinkle the veggies with salt & pepper. Let the veggies saute away. When you start smelling the green onions & the zucchini are nice & soft, throw on some parsley. I have parsley growing abundantly outside, so I maybe used 2-3 tablespoons & threw the whole heap on top of everything. Give one that mix & serve. Enjoy!
